Braised Mixed Vegetables

Ingredients
1 X 5 cm piece (10 g) ginger
5 cloves garlic
1 green chilli
1/3 cup (80 ml) vegetable oil
½ tsp cumin seeds
1 medium (750 g) cauliflower cut into flowerettes of about 2.5 cm (300 g)
2 cups (300 g) shelled peas (fresh or frozen)
2 large (240 g) carrots (peeled and cut into 1 cm cubes)
1 tsp coriander powder
1 tsp cumin powder
½ tsp red chilli powder
½ tsp turmeric powder
2½ tsp salt
¼ cup (60 ml) water

Recipe
1. Grind into a paste ginger, garlic and green chilli.
2. Heat oil in Curry Pan on medium heat for about 2 minutes. Add cumin seeds. Stir for a few seconds. Add ginger paste. Stir for a few seconds. Add remaining ingredients. Mix.
3. Reduce heat to low. Cover. Cook till vegetables are tender (about 30 minutes). Serve hot with paratha.
