Sai Bhaji
Spinach with Vegetable and Bengal Gram

Ingredients
2/3 cup vegetable oil
2 large (350 g) onions (chopped)
15 green chillies (chopped)
10 cups spinach (trimmed and coarsely chopped)
10 g ginger (chopped)
3 large (450 g) tomatoes (chopped)
2 tbsp salt
1 cup chuka bhaji (trimmed and coarsely chopped)
1 cup fenugreek leaves (trimmed and coarsely chopped)
½ cup dil (trimmed and coarsely chopped)
1 small (75 g) potato (peeled and chopped)
1 small piece (100 g) red pumpkin (peeled and chopped)
1 medium (100 g) brinjal (chopped)
1½ cups Bengal gram (soaked in water for ½ hour and drained)
½ cup water
tempering  
¼ cup vegetable oil
15 flakes garlic (crushed)

Recipe
1. Heat oil in cooker for about 2 minutes. Add onions and chillies. Fry till onions are light brown. Add all other ingredients except those for tempering. Mix, pressing down spinach.
2. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 6 minutes.
3. Remove cooker from heat. Allow to cool naturally.
4. Open cooker. Mash vegetables with back of a ladle till well blended.
5. For tempering, heat oil in a pan for about 2 minutes. Add garlic. Stir fry till golden brown and pour over sai bhaji. Stir. Serve hot.
