Ratatouille

   in 5 Litre Hawkins Ceramic-Coated Contura Tomato Red

 
Ingredients
2 tsp olive oil
4 cloves garlic (finely chopped)
2 medium (10 oz / 300 g) onions (thinly sliced)
1 medium (10 oz / 300 g) eggplant (cut into ½ inch / 1 cm cubes)
1 medium (4 oz / 120 g) green peppers (de-seeded and cut into ½ inch / 1 cm pieces)
2 large (1¼ lb / 550 g) tomatoes (peeled and cut into eighths)
1 (¾ lb / 350 g) zucchini (cut into ½ inch / 1 cm slices)
1½ tsp salt
½ tsp pepper
1 tbsp parsley (chopped)

Recipe
1. Heat oil in cooker for about 1 minute. Add garlic and onions. Stir fry till onions are transparent. Add remaining ingredients except parsley. Stir.
2. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 4 minutes.
3. Remove cooker from heat. Lift vent weight slightly to release pressure.
4. Open cooker. Remove vegetables with slotted spoon and place on serving dish. Keep hot.
5. Return cooker to high heat and boil till liquid is reduced to half, stirring occasionally. Pour over vegetables. Serve hot, garnished with parsley.
