Mashed Potatoes

Ingredients
1 cup water
6 large (4 lb / 1.8 kg) potatoes (peeled and cut into 1½ inch / 4 cm cubes)
1 1/3 cups milk (heated)
¼ cup butter (melted)
2 tsp salt
¼ tsp pepper

Recipe
1. Pour water into cooker. Put grid in cooker. Place potatoes on grid.
2. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 6 minutes.
3. Remove cooker from heat. Lift vent weight slightly to release pressure.
4. Open cooker. Place potatoes in a warmed bowl. Break up potatoes with fork. Beat until smooth (about 1 minute with a heavy duty mixer) or use any of a fork, potato masher, food mill, blender, regular electric mixer.
5. Add remaining ingredients. Continue beating until fluffy. Serve hot immediately.
