Kaju wali Kheer

Ingredients
2½ cups / 600 ml milk
3 tbsp / 45 ml Basmati rice (washed)
¼ cup +1 tbsp / 60 g sugar
2 green cardamoms
1 tbsp / 15 ml ghee
6 Cashew nuts (broken into pieces)

Recipe
1. Bring milk to boil in a cooker. Add rice, sugar and cardamoms. Stir till sugar is dissolved.
2. Close cooker. Bring to full pressure on medium heat on small burner of Gas Stove or on 400 Watts on Induction Cooktop. Reduce heat and cook for 12 minutes.
3. Remove cooker from heat . Allow to cool naturally.
4. Open cooker.
5. Place cooker with kheer on medium heat/400 Watts and cook until a creamy consistancy is obtained (about 2 minutes), stirring constantly.
6. Transfer kheer into a serving dish. In a separate pan, heat 1 tbsp ghee on medium heat about 1 minute. Add cashew nut pieces. Stir-fry till light golden. Remove and drain ghee. Stir cashew nuts in kheer and serve hot/cold as desired.
