Carrot Pudding

Ingredients
10 large / 1.8 kg carrots (peeled and grated)
¼ cup / 60 ml milk
2 cups / 400 g sugar
2 2/3 cups / 400 g mava (crumbled)
¼ cup + 3 tbsp / 90 g ghee
20 almonds (blanched, skins removed and sliced)

Recipe
1. Put carrots and milk into cooker.
2. Close cooker. Bring to full pressure on high heat. Remove cooker immediately from heat. Lift vent weight slightly to release pressure. Open cooker.
3. Place open cooker with carrots and milk on high heat. Add sugar. Cook till liquid dries up (15 minutes), stirring occasionally. Add mava and ghee. Cook till ghee shows separately (10 minutes), stirring constantly. Serve hot, garnished with almonds.
