Fish Steak with Mushrooms

Ingredients
½ cup dry white wine
1½ tbsp white wine vinegar
3 tbsp soy sauce
1 inch (2.5 cm) piece fresh ginger (grated)
1 tbsp sugar
1 tsp salt
2 large or 4 small (1¾ lb / 800 g) halibut steaks (1 inch / 2.5 cm thick)
½ cup (1 oz / 30 g) mushrooms (thinly sliced)
½ cup green onions (including tender green portion cut diagonally. Separate 1 tbsp of green portion for garnish)

Recipe
1. In a shallow bowl, mix together all ingredients except fish, mushrooms and green onions. Add fish steaks. Turn them in sauce and marinate for 1 hour.
2. Put grid in cooker. Place fish on grid. Pour marinade into cooker. Arrange mushrooms and onions except the 1 tbsp reserved for garnish over fish.
3. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 6 minutes.
4. Remove cooker from heat. Press finger-tip control to release pressure.
5. Open cooker. Place fish with vegetables on serving dish. Keep hot. Remove grid from cooker.
6. Return cooker to high heat and boil till liquid is reduced to half, stirring occasionally. Pour over fish. Serve hot, garnished with reserved green onions.
