Spanish Rice Casserole

   in 3 Litre Futura Nonstick Cook-n-Serve Stewpot

 
Ingredients
1 tbsp butter 
3 bay leaves 
3 flakes garlic (finely chopped)
2 medium (225 g) onions (chopped)
2 medium (225 g) capsicums (de-seeded and chopped)
2 cups (400 g) Basmati rice 
2/3 cup celery (chopped)
3 large (550 g) tomatoes (blanched, peeled and chopped)
2 tsp salt 
½ tsp pepper 
½ tsp red chilli powder 
3¾ cups (900 ml) water
1 cup (70 g) cheese (grated)

Recipe
1. Melt butter in the Stewpot on medium-high heat. Add bay leaves and garlic. Stir for a few seconds. Add onion. Stir fry till onions are transparent. Add all other ingredients except cheese. Mix. Bring to boil and immediately reduce heat to low.
2. Cover and simmer for 15 minutes, or till rice is cooked and water is absorbed.
3. Add cheese. Mix. Serve hot.
