Chingri Macher Malai Curry
Prawns in Coconut Milk

Ingredients
3 cups coconut (grated)
1 cup water
10 g ginger
10 flakes garlic
½ cup mustard oil
3 medium (350 g) onions (chopped)
1¼ tsp turmeric powder
2½ tsp red chilli powder
1½ tsp garam masala powder
1¼ kg prawns (shelled, de-veined and wiped dry)
4 tsp salt
2 tsp sugar

Recipe
1. Extract 1 cup milk from coconut using 1 cup water.
2. Grind ginger and garlic into a paste.
3. Heat oil in cooker for about 5 minutes. Add onions and fry till golden brown. Add ground paste, turmeric, chilli and garam masala powders. Stir for a few seconds. Add prawns. Stir fry for about 1 minute. Add coconut milk, salt and sugar. Stir till sugar is dissolved.
4. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes.
5. Remove cooker from heat. Lift vent weight slightly to release pressure.
6. Open cooker. Serve hot.
